21 Day Fix Extreme - Turkey Meatballs


1/2 Yellow 1 Red - 5 meatballs = 1 serving


HERE IS WHAT YOU NEED:
1.5lbs raw 93% lean ground turkey breast
1 tsp. sea salt or Himalayan salt (Mineralize)
1 tsp. dry mustard
1 tsp smoked paprika
1 large egg
3/4 cup quick cooking oats
2 cloves garlic, finely chopped
12 fresh parsley sprigs, finely chopped
1 Tbsp. tomato sauce, no sugar added
WHAT YOU NEED TO DO:
1. Preheat oven to 400 degrees F (204 C)
2. Lightly coat large baking sheet with spray; set aside
3. Combine turkey, salt, mustard, paprika, egg, oats, garlic, parsley and tomato sauce in a large bowl; mix well by hand. 
4. Roll mixture into 30 1-inch meatballs. Place on prepared baking sheet. 
5. Bake for 15-20 minutes or until no longer pink in the middle.
6. Serve with your favorite sides!!!

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                1 large onion – chopped
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                2 large leeks – chopped
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                6 small carrots – peeled and sliced
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                2 parsnips – peeled and sliced
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                4 cups chicken broth – no sugar added
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                4 cups water
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                4 large, raw chicken breasts – cut into bite size pieces
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                1 tsp garlic powder
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                1 tbsp marjoram
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                Brown rice or noodles – Cooked separately according to package directions (omit for paleo)

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                (I used brown rice with Quinoa.  I made the rice separately and put it in the bowl then added the chicken soup to the top and stir.  This way the rice will not get all soggy)

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                 
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                DIRECTIONS:
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                Using a non stick pan, sauté the onions, leeks, carrots and parsnips in the olive oil until the leeks and onions wilt (about 5 – 7 minutes).
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                 
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                Transfer your vegetables to a large soup pot and add your broth, water and herbs. Cook for half an hour.

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                (Makes 22 Meatballs)
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                INGREDIENTS:
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                • 1 1/2 pounds lean, ground turkey
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                • 1 tablespoon garlic powder
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                • 1 tablespoon onion powder
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                • 1 tablespoon Italian Seasoning
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                • 1 1/2 cups clean tomato sauce
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                • 1/4 cup fresh, grated parmesan cheese


                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                DIRECTIONS:
                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                In a large mixing bowl, knead the turkey together with the spices.

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                Roll meat into 22, walnut sized meatballs, and place in a single layer in your slow cooker 

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                Pour the tomato sauce over the top, being sure to cover the meatballs well and evenly.

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                Sprinkle the cheese across the top and set the slow cooker to low heat for 4 hours.

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                Serve over pasta with a little extra parmesan cheese.

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                Note: These are a fairly dense meatball. You can add finely chopped mushrooms to the mixture to soften them up a bit. About 1/2 to 1 cup should be fine, and you’ll get more meatballs out of it to boot.
